Descriptive statistics were performed in R software version 3.0.2 [25]. The Survey package [26] in R was used to adjust for the complex survey design. Weights for the slaughterhouse level data were calculated by dividing the number of each type of slaughterhouse by the number sampled. Weights for the slaughterhouse worker data were calculated by dividing the total number of slaughterhouse workers in the slaughterhouse by the number sampled, with slaughterhouse used as a clustering variable. Design-based adjustment was implemented using the svydesign procedure in the Survey package in R [27].
